How did you get the meat so tender?
I had a few friends over for dinner, and I served my mom's most requested barbecue meatballs.
If you know my mom, you know what a great cook she is. I learned from the best. That sauce, with the orange marmalade for zest. The smell filling up the whole house. Dinners after church, second helpings, and everyone stuffed. I grew up on these.
Her recipe is already meatless, built on pecans that give them a tender, meaty bite. I just took it the rest of the way to vegan. Vegan cheese in place of the cheese, no eggs, and I bake them now instead of frying. Same sauce, marmalade and all. Same second helpings. (One tip if you make them yourself. Check with your guests about nut allergies first. I always do.)
So there we were, plates full, everyone quiet in that happy way. One of my friends looked up and asked me, in all seriousness, how I got the meat so tender. I giggled. There is no meat.
You should have seen his face. Then the laughter went around the table, and every single person went back for more.
That is one of my favorite things. Watching someone fall in love with a dish first, and only later find out how good it is for them. A full plate, a happy table, and the good news comes out with the laughter.
