Americans Stopped Cooking in 2015

Most people can tell you what they should be eating. More vegetables, less sugar, fewer drive-thrus. That part usually isn't the problem.

The problem is Tuesday at 6pm, when you're tired and hungry and the vegetables in your fridge require a plan you don't have.

Americans now spend more money eating out than eating at home. That flipped in 2015, and outside of the pandemic year it has only widened since. When somebody else is deciding what goes in your food, they're optimizing for taste, not for your health, and the salt, sugar, and oil levels tell you which one wins.

Here's what changes when you can actually cook.

• You stop needing recipes. Once you know how to build flavor, you can open your fridge and make something good out of what's there.

• You stop hating vegetables. Most people who say they don't like them have only had them boiled or from a can. Charred broccoli with garlic and lemon hits entirely different.

• You control the salt, sugar, and oil. Those three are how restaurants get you. Cook, and you're the one dialing them.

• It gets fast. A dish takes 40 minutes the first time and 15 by the fifth.
