Dr. Ruby Lathon is a certified holistic nutritionist and inspires with a powerful story of recovering from cancer through alternative treatment focused on a whole food, plant-based diet. Dr. Ruby was featured in the hit documentaries, What the Health and They’re Trying to Kill Us. Dr. Ruby worked as a researcher and an award-winning engineer, and now teaches others how to re-engineer their health and live disease free. Dr. Ruby recently released a new cookbook: Stop Playin’, Go Vegan: Getting Serious with Healthy Vegan Recipes to Prevent and Reverse Disease!
Dr. Ruby is an inspirational and highly sought-after speaker on motivation, natural healing and disease prevention. Dr. Ruby heads up Ruby Reds Vegan Ready-to-Eat Meals, an organic meal delivery service, delivering to the Washington DC metro areas. She offers nutrition coaching, online courses, cooking classes and seminars. Dr. Ruby also lends her expertise to Body Complete Rx (BCRX), a wellness brand with a complete range of plant-based health and beauty supplements available at The Vitamin Shoppe.
Dr. Ruby earned a Ph.D. and M.S. in Industrial and Systems Engineering, from the University of Alabama in Huntsville, and a B.S. in Computer Science from Oakwood University. She received her nutrition training and certification at the Washington Institute of Natural Medicine. Dr. Ruby served as Nutrition Policy Manager at the Physicians Committee for Responsible Medicine, where she developed and led a national grassroots campaign to advocate legislation for more healthful, plant-based meal options in the National School Lunch Program. Dr. Lathon is host of The Veggie Chest, a cooking show featured on YouTube and DC Cable TV.
