About the Recipe

No bake decadent Chocolate-Cherry Mousse with a surprise kick of cinnamon-cayenne!
Optional whipped aquafaba adds cloud-like fluff!

Raw cacao powder is made from unroasted beans, retaining more nutrients and bitter flavor. Cocoa powder is roasted, often sweetened & more processed.

Ingredients

2 cups pitted dark sweet cherries (frozen); reserve ½ cup cherries for garnish

2 ripe avocados

1 large banana

1/2 cup coconut or raw agave nectar

1/2 cup raw cocoa powder

1 tsp vanilla or almond extract

1 tsp cinnamon

1 pinch each cayenne and sea salt

1 cup aquafaba to make more fluffy (optional), Aquafaba is the whipped liquid from cooked chickpeas, used as an egg white substitute.

Preparation

  1. Add all ingredients to food processor (except ½ cup cherries) and pulse.

  2. Blend until smooth.

  3. Transfer mousse to individual serving dishes or 1 large dish.

  4. Chill in fridge for 2 hours. You can also freeze it to make an ice-cream like mousse.

  5. Top with blended or chopped cherries and a few leaves of mint.
